Mi Xao - stir fry noodles

This is a very good basic stir fry noodle recipe - you can use any protein you want and any vegetables you have - oyster sauce - chinese soy sauce (lee kum kum is what I use) - yellow wonton noodles (about 3 bunches) - sugar - chicken bouillin - garlic - broccoli - carrots - protein (shrimp, pork, beef, etc) - sugar - dark soy sauce 1. boil water, add a few drops of oil to prevent noodles from sticking. once boiled, add 3 bunches of yellow noodles and cook briefly - maybe about 30 seconds or so. Drain water, reserve about 2 cups of noodle water - set aside. Drizzle with a little avocado oil and dark soy sauce for color. 2. in a separate bowl, add 1 metal spoon of sugar, 1 metal spoon of oyster sauce, 1 metal spoon of soy sauce, 1/3 metal spoon of chicken bouillon. Mix well. add about 1 ladle (about 1/4 cup) of starchy noodle water - mix well. 3. Cut up vegetables. 3. In a pan, add oil and stir fry garlic and protein. add the vegetables. add a few spoons of the sauce. add the noodles - add more sauce to taste.
