Japanese Udon
5 cups dashi (Japanese soup stock) (use standard Awase Dashi, a dashi packet or powder, or Vegan Dashi)
2 Tbsp mirin
2 tsp sugar
1 Tbsp soy sauce
1/4 tsp Diamond Crystal kosher salt (plus more, to taste)

1. add 5 cups water + 4 dashi packets
2. over medium heat, bring to boil - shake bag few times then reduce to medium low and simmer for 2-3 mins, remove bags
3. add above and bring to simmer
